Description
To tickle your taste buds, we conceived four personnalized gastronomic picnics in which our champagnes are best paired with refined food and cooked dishes.
Come to our wine-tasting room, the former school of our village, or to our terrace surrounded by vineyards, and taste these four original menus especially created for you by the good care and expertise of our domain and our local and talented caterer.
These gastronomic picnics are composed of one starter, one main dish and one dessert, and are adapted around four themes (Earth, Sea, Cheese and Vegetarian) in order to highlight three champagnes of our domain for each picnic (3 dishes, 3 champagnes).
All the dishes are served cold, and the picnics have to be tasted in the wine-tasting room or on the terrace.
Cheese Menu:
> Mâche salad and green asparagus, compté and egg mimosa, vinaigrette, creamy old-fashioned mustard, paired with a glass of « Brut Nature » Champagne.
> Champagne twist: white pudding from Rethel with mushrooms, Chaource, mesclun and squash seeds, honey vinaigrette, paired with a glass of « Brut Prestige » Champagne.
> Duo of samosas with Langres and Epoisses, mushroom cream and small plain bacon, paired with a glass of « Cuvée Interdite » Champagne.
Earth Menu:
> Poultry Wrap: Champagne yellow chicken supreme, pistachio, miwed greens, cucumber, watermelon and coriander breading. Light horseradish cream, paired with a glass of « Brut Essence de Terroir » Champagne.
> Pâté vigneron (pork marinated in white wine), braised endives, mixed greens and candied artichokes, paired with a glass of « Cuvée Provocante » 100% Meunier Champagne.
> Tiramisu with pink biscuits from Reims and red fruits, paired with a glass of « Brut Rosé Ame de la Rive Droite » Champagne.
Sea Menu:
> Bulgur salad and marinated scallops tartare with granny smith apples and a touch of anise, bergamot vinaigrette, paired with a glass of « Extra-Brut Fraîcheur de Côteau » Champagne.
> Prawn and roasted mango skewers, sautéed potatoes with thyme and diced pear, lightly seasoned with balsamic cream, paired with a glass of « Cuvée Rebelle » 100% Chardonnay Champagne.
> Madeleine baked in butter and citrus zest with mascarpone and orange slices, paired with a glass of « Ratafia Champenois Nectar Hédoniste ».
Vegetarian Menu (with fish):
> Tart tatin with sun-drenched vegetables and baby greens in vinaigrette, paired with a glass of « Cuvée Impertinente » 100% Pinot Noir Champagne.
> Salmon tartar with fresh herbs and pan-fried potatoes deglazed with raspberry vinegar, paired with a glass of Vintage Edition 2013.
> Shortbread cookies with lemon cream and meringue slivers, paired with a glass of « Demi-Sec Essence de Terroir » Champagne.
Children Menu:
> Chicken strips with tagliatelli, pack of candy and pack of potato chips, chocolate fondant, organic fruit juice or organic lemonade.
